Mouton attended the University of Oregon as a freshman, and then transferred to the University of San Francisco for his junior season and graduated from USF in 1989 with a Bachelor’s Degree in Sociology. He played basketball for the Dons from 1987 to 1989. Mouton was hired on the coaching staff at the University of Nebraska. When Jay John took over the Beaver basketball program as Head Coach in 2002, Mouton spent all six years of John’s tenure as his lead assistant.

Mouton said that the toughest part of coaching in the Pac-10 is the quality of coaches he has to game plan against. “The coaching in this league is incredible, from top to bottom,” he said. “It is the strongest league, I think, in the country, and we’re just trying to find our way.”

Prior to going to OSU, he coached at University of Nebraska, St. Mary's College, Eastern Illinois University, University of New Hampshire, Butler University, and Colorado School of Mines. He is a former college basketball Assistant Coach for Rice University in Houston, Texas. Mouton was formerly the interim Head Coach at Oregon State University. He became the Head Coach of the Beavers after the school fired Jay John on January 20, 2008. He was previously an Assistant Coach at the school. 

Kevin Mouton was hired as the Head Basketball Coach at Second Baptist School in Houston, Texas in 2011. He has coached the team to three TAPPS 5A Final Fours, the 2018 State Championship, and was named 2017-2018 Texas Association of Basketball Coaches Coach of the Year (Daily Emerald).
